Introduction
Tannia Log is a porridge made from Tannia. In other countries Tannia is know as Malanga, Yautia and Tanier. "Log", popular with local men and credited with giving them "lead in de pencil"... placebo?, you decide.
Ingredients
2 lbs tannia root, peeled and finely grated
1/2 tsp ground nutmeg
2 bay leaves
3 cloves
1 coconut (extract approx 8 cups coconut milk)
5 - 8 spearmint leaves
1 stick cinnamon bark
1 (6 oz) can sweetened condensed milk
Method
Boil coconut milk with spices. Add roots and stir until completely combined. Simmer uncovered over low heat for about 20 minutes or until color becomes grayish and roots are cooked. Take off heat and stir in can of milk. Return to very low heat for 20 minutes, stirring occassionally, until desired consistency.
Serving
Serve in bowl.
To enjoy, DO NOT dip the spoon, you must skim the top, delicious.
